Beetroot dip

For all of those beetroot fans out there – this recipe is a must try! A great,  scrumptious addition to any BBQ!

Ingredients:

Serves enough for a small party

  • Olive oil
  • 1kg beetroot, peeled & chopped
  • Apple cider vinegar
  • 1 tbs maple syrup
  • 1-2 tsp ground cumin
  • 2 tbsp goats yoghurt
  • Knob of butter
  • Salt & pepper

Method:

  1. Peel and grate the beetroot into the blender and add in all
    the other ingredients.
  2. Whizz up in a blender.
  3. Delicious served with carrots or alongside BBQ Mackerel.
